Wine Babylon’s Peak, “The Wedge” Pinotage

Introduction

Shiraz-Carignan – dry red wine made from a blend of two grape varieties – Shiraz (60%) and Carignan (40%) that grow in the vineyards Svartlanda. Crop harvested by hand in small boxes, which are then left for a day in a cold room with a temperature of 5 C. After desteblirovaniya and crushing grapes undergoes a 48-hour cold maceration. Fermentation is carried out in traditional open fermentors. Malolactic fermentation takes place in oak barrels. Matured wine 12 months in French oak barrels. The wine “Shiraz-Carignan” conquers its taste and aroma from the first seconds, it goes well with cheese, pasta and light meat dishes.
