Wine Caprili, Rosso di Montalcino DOC, 2021

Introduction

To create a dry red wine Caprili, Rosso di Montalcino DOC, the producer uses Sangiovese grapes from the Testukya vineyard. The soil of the vineyard is calcareous with a generous silica content. The average age of the vines is 10 years. Crop harvested by hand. Spontaneous fermentation takes place at a controlled temperature in steel tanks and lasts no more than three weeks. Malolactic fermentation takes place in cement tanks. Excerpt wine lasts 12 months and is carried out in large Slavonic oak barrels, and then a few more months in a bottle.
