Wine Casa di Terra, “Mosaico”, Bolgheri DOC, 2021

Introduction

“Mosaico” is a unique wine created using carefully selected techniques and high-quality ingredients. Fermentation takes place in special stainless steel tanks at a controlled temperature of 26-28 C for 15 days. The process uses natural yeasts that live on the grape skins, which gives the wine unique aromatic qualities. Spontaneous malolactic fermentation gives the wine an extraordinary character and distinct flavor profile. The wine is aged in carefully selected French oak barriques for 12 months. The wine then undergoes 6 months of bottle maturation, achieving balance and completion.
