Wine Castel Sallegg, Cabernet Sauvignon Riserva, Alto Adige DOC, 2019

Introduction

Castel Sallegg, Cabernet Sauvignon, Alto Adige DOC – aromatic red dry wine with a rich taste, made from Cabernet Sauvignon grapes, which is grown on clay-sandy soils along the shores of Lake Caldaro at an altitude of 230 to 280 meters above sea level. Caldaro is located in the Alto Adige region, the northernmost wine-growing province of Italy. Wine was produced in this area before the arrival of the Romans, and some evidence indicates that wine production dates back to the Iron Age. Winemaking continued to develop into the Middle Ages thanks to the dedicated care and hard work of the monastery employees. The ideal geoclimatic conditions are the starting point for the production of the highest quality red wines. The vines are processed according to the Guyot system. Harvested when the berries reach optimum ripeness. At the winery, berries are fermented at a controlled temperature not exceeding 28 C in stainless steel tanks for 15 days. After the completion of natural malolactic fermentation, the wine is aged partly in steel containers (50%) and partly in French oak barriques (50%) for 12 months. The potential of the wine is at least 5 years.
