Wine Cotar, Merlot, 2009

Introduction

Cotar, Malvazija – dry white wine made from Malvasia grapes grown on several hectares of Marco vineyards. Vineyards are evenly distributed in different sections of Karst. The average age of the vines reaches 100 years. The soils are mainly limestone, the basis is the accumulation of stones and the lack of earth cover. The conditions for growing grapes are not very favorable, but wines made from berries grown on this site have a special character and taste, which is worth the effort. Harvested when the berries reach the optimum level of ripeness. At the winery, berries are macerated in open vats for 5 days, followed by manual pressing using a wooden press. Fermentation takes place in open tanks with the addition of natural yeast. The wine is aged on its own lees without the use of sulfur dioxide in oak barrels for 30 months and another 10 months in a bottle. Wine does not go through the filtering process, therefore, the presence of a cloudy precipitate is normal, which indicates naturalness. The wine label is decorated with a fingerprint image. A fingerprint is a kind of authors signature, a symbol of faith in success, a sign of uniqueness and diversity. Wine is recommended to be served as an aperitif, with fish, seafood and poultry.
