Introduction

Red wine “Arbin” Mondeuse made from grapes Mondez Noir grown in the vineyard in Savoy Arben. Vineyard soil – clay and limestone, exposure – south-east. Grapes Mondez is a native variety of Savoy; berries are juicy, sweet, with a slight tartness. The grapes are harvested by hand, then within 15-20 days maceration takes place. Alcoholic fermentation begins after malolactic fermentation that converts malic acid to lactic acid. It reduces the acidity of the wine and prevents fermentation in the bottle. Wine is aged 12 months in oak barrels.
