Introduction

Domaine de l’Herre, Sauvignon Blanc, Cotes de Gascogne IGP – an unusual Sauvignon, the palette of which is dominated by tones of apple and pear. Grapes are harvested at optimum maturity in the coolest time of the day. To protect the berries from oxidation in air during pressing, they are first left to macerate on the skin at low temperature. Due to the slow, careful extraction, the juice flowing into the tanks retains its high aromatic strength. Fermentation takes place slowly at a controlled temperature and lasts about 21 days. Then the wine is aged on the lees and periodically stirred.
