Introduction

Neumeister, Sauvignon Blanc “Steirische Klassik” is an organic Sauvignon Blanc from a zone in south-east Austria, called the Vulkanland Steiermark (Styrian Volcanic Land) due to volcanic soil and the remains of volcanoes still preserved in the region in the form of hills. Sauvignon Blanc is grown around the commune of Straden, the age of the vines varies from 10 to 25 years. Vineyards are cultivated by hand, exclusively organic methods. To achieve maximum quality control and optimum ripeness, the grapes are harvested in several approaches. Carefully sorted grapes undergo soft pressing, maceration on the skin for 12-18 hours and fermentation in stainless steel tanks and oak barrels at a controlled temperature of 20-23 C. Aging on fine yeast sediment lasts 5 months. The storage potential of Sauvignon Blanc “Shtirishe Classic” is 4 years.
