Wine Ilatium Morini, “Ciliegi”, Valpolicella Ripasso DOC, 2019

Introduction

“Campo dei Ciliegi”, Valpolicella Superiore Ripasso DOC – the classic Italian red wine with a rich, intense flavor that is best revealed in a pair with meats and cheeses. Blend wine is from grapes Corvina and Rondinella, grown in the vineyards of Latium Morini Ripasso Valpolicella zone DOC. Grape vines with an average age of 10-15 years are growing around Illasi and Mezzane at an altitude of 180-200 meters above sea level. Selected grapes are harvested by hand in boxes of 12-15 kg in the first week of October. At the winery the grapes destebliruyut, pressed and maceration of the skin is carried out for 48-72 hours. Further, the new wine is added from the pomace of Amarone, resulting secondary fermentation begins wort (Ripasso technique). The application of this technique increases the saturation level of the wine, its taste and becomes more rich and complex. Matured wine in 350 l French oak barrels for 12-15 months and 6 months, the wine rests in the bottle. The potential for storing wine for 5-6 years.
