  • Lucy M, Chardonnay Petillant Natural – natural sparkling wine made from Chardonnay grapes, which is grown in the vineyard of Robert Surman in Totness. The vines are planted here on black sandy soils covered with petrified slate. Throughout the region, the ripening season is always accompanied by drought. This, along with low temperatures, allows the grapes to ripen slowly and evenly, resulting in concentrated wines. Agricultural methods are exclusively organic and biodynamic, in order to preserve the ecological balance of the soil, as well as the environment as a whole. Respect for the vineyards has a beneficial effect on the quality of the harvest, allowing you to harvest healthy, juicy fruits full of aroma and taste. Harvested by hand when the berries reach optimum ripeness. Whole bunches are pressed, followed by maceration in 680 liter ceramic egg-shaped containers for 2 weeks. Further, sparkling wine is made according to a very old method – Petillant Naturel or Pet-Nat. According to this method, the must is bottled in the middle of fermentation and the bottles are sealed with caps. Thus, fermentation of carbon dioxide remains in the wine along with the yeast. In addition, the wine does not need sulfonation because it remains stable thanks to the integrated carbon dioxide. Exposure in a bottle on the lees lasts 6 months, then the lees are removed from the bottle (disgorgement). Each bottle is adorned with a homemade label drawn by Anton van Klopper himself on the day of bottling.
