Wine Manara, “Le Morete”, Valpolicella Ripasso DOC Classico Superiore, 2017

Introduction

“Le Morete” – a very harmonious, balanced, aromatic dry red wine made from traditional Valpolicella grape varieties. The grapes are grown in a special vineyard called “Le Morete”, which is located on the hillside of the Valpolicella Classico region in the area of San Pietro in Cariano. Harvested by hand. The grapes are gently crushed immediately after harvest and fermented in stainless steel tanks. The wine is then mixed with pomace from the fermentation of Amarone and Recioto wines. This old technique called “ripasso” is usually performed in March. After the second fermentation, the wine is aged in 20 hectoliter Slovenian oak barrels and in French barriques for 12 months and then in bottles for about 6 months. It is recommended to let the wine breathe for an hour before drinking.
