“Stropa” Amarone della Valpolicella Classico – bright, elegant natural red wine, born in the heart of the historical area of Valpolicella, on the Castelrotto hill. The crop is harvested from 50-year-old vines cultivated by biodynamic methods at an altitude of about 150-200 meters above sea level on calcareous-calcarenite soils of the Eocene period. Rows of vines are interspersed with tall trees (mulberry, almond) that support them. According to the old tradition, the shoots are tied with a willow sling, which is much more stable and flexible against the strong winter winds that pass over the hill.
The wine is harvested by hand from mid-September. Then the best bunches are selected, which are folded into wooden trays and placed in the attic for natural drying for 3-4 months. At the end of December, dried grapes are separated from the ridges. Spontaneous maceration and fermentation in open oak vats with manual punching of the wort head lasts 30-40 days. Aging in 25 hl oak barrels lasts 3 years, after bottling “Stropa” matures for at least 30 months.
