Wine Novaia, Valpolicella Classico DOC, 2019

Introduction

Novaia, Valpolicella Classico DOC is created from the varieties Corvina, Rondinella and Korvinone grown in the hills of Veneto at an altitude of 400 meters above sea level. The soils are rich in marl rocks interspersed with clay and lime. Crop harvested in late September, the berries were immediately crushed. Further, the future wine fermented at a controlled temperature in small stainless steel tanks. Fermentation lasts 7-8 days, with each day made delestazh. Wine aged in steel containers for 10 months followed by another two months – in the bottle. As a result of the wine Valpolicella Classico from Novayya acquires a beautiful ruby red color and subtle floral fragrance.
