Introduction

Spada, “Dulcis” Recioto della Valpolicella Classico DOCG is an incredibly aromatic, thick, sweet red wine made from grapes from the Corvinone, Rondinella, Corvin and Molinar varieties grown on the hilly slopes of the historic zone of Valpolicella Classico. After harvesting, the berries are dried using the traditional appassimento method, acquiring a concentrated aroma and sweetness. Cold fermentation takes place at a temperature of 10 C, then the wort is infused on the skin for a month with periodic stirring, which helps to extract the most saturated bouquet of aromas. Fermentation takes place in stainless steel tanks and concrete tanks. Before going on sale, the wine is aged 36 months in French oak barrels.
