Wine Speri, “La Roggia” Recioto della Valpolicella DOCG Classico, 2019, 0.5 L

Introduction

The grapes for wine making Speri, Ripasso is grown on the estate Speri, located in the heart of the Valpolicella Classico, in the municipalities of San Pietro in Karia, Fumane and Negrar at an altitude of between 120 and 350 meters above sea level. Crop harvested from mid-September to mid-October. Eight process of maceration after destemming and soft pressing takes place in stainless steel tanks at controlled room temperature 20-24 C. After that wine is placed in cement tanks for completion of alcoholic and passing MLF. Secondary fermentation on the cake for the wine Amarone takes place at a temperature of 15 -18 C and lasts for 9 days. Aging wine in oak barrels takes about 12 months. For some time the wine is aged in bottle prior to release to the market.
