The name of the wine “Ognisanti” comes from the ancient church “All Saints”, located among the vineyards of the estate of Villa Novara. Their soil and sun exposure are particularly suitable for the cultivation of this real “Cru” grape varieties Corvina and Rondinella. “Ognisanti” is the wine of exceptional complexity and completeness. As a result of a careful selection of a small number of vines, wine is produced in limited quantities. So the light is born elegant, rich wine with lots of character.
The grapes for “Ognisanti” grown in the hills with calcareous soils with good drainage, which provides a tight rocky skeleton. Harvested a little later than usual terms in the second half of October. This is possible only in the best years, when the harvest class allows you to create a wine with concentrated, typically a sweet, mild flavor. Vinification includes the steps of maceration and subsequent long fermentation at a constant temperature at 20 C. Then the wine is aged for 18 months in oak French barrels and at least 6 months in bottles.
