Wine Villa degli Olmi, “Rentozzi” Pinot Grigio delle Venezie DOC, 2022

Introduction

“Gatto Matto” Nero d’Avola – an elegant red dry wine made from grapes that grows in Sicily. The crop is harvested when the berries reach the optimum level of ripeness, after which the grapes are carefully delivered to the winery, where they are subjected to careful sorting and soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature of 20 C for 14 days. This is followed by spontaneous malolactic fermentation. Finally, bentonite is clarified and filtered once.
