Wine Werlitsch, “Ex Vero II”, 2020

Introduction

“Ex Vero II”, 2015 – a magnificent white biodynamic wine, representing Sauvignon Blanc from a completely different perspective. Maintained in the blend by a small fraction of the Morillon variety (as Chardonnay is called in Southern Styria), the local Sauvignon Blanc demonstrates a pure mineral character. The proximity of the vineyards to the Loire is reflected in its taste and aroma with hints of smoke and silicon, and the rich fruit nuances do not give sweetness and fit well into the dry, refreshing style of the wine.
In the manufacture of Ex Vero II , spontaneous fermentation with natural yeast in large open wooden vats is used. Then the wine is aged on a thin yeast sediment in oak barrels for 2 years, and after bottling without filtering, it spends another year in the cellars of the winery.
